Cha Shu, Cantonese style

Cut pork into 1 to 1.5 inch by 6 inch strips. Mix rest of ingredients and marinade meat overnight.

Heat oven to 375F. Line roasting pan with aluminium foil. Add 1 to 2 inches boiling water to pan. Arrange single layer of marinaded meat on cake rack and place in pan. (Make sure pan does not boil dry, this prevents the meat becoming dry.)

Roast 1hr 15 minutes, turning at halfway mark.
